WebInduction cooktops use an electromagnet to generate heat, which reacts with certain metals, like cast iron and stainless steel. As a result, the heat is transferred into the pot or pan and surrounding area. When the induction cooktop is on, the area around the cooktop will be hotter than other cooking surfaces due to the heat transfer. WebWe have a relatively recent mid-price induction cooktop and all the problems you mention are there, albeit may be to a lower extent than say 5-10 years ago. That said, we still prefer it to gas because we can set a timer for a lot of the recipes we cook and forget about it. No more pot-watching. Also, boiling water in seconds, nice!
